Chickpea mushroom kale omelette

Happy Friday friends. Mine is action packed. On the run all day but in a good way. Have a fab one. Oh…and make this omelette…it’s yum and embarrassingly easy

Recipe: Mix dry ingredients: 1 cup chickpea flour, 2 tbsp nutritional yeast, 2 tbsp ground flaxseed, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1-1/2 tsp baking powder, 1/4 tsp black pepper, salt to taste. For each omelette, mix well 1/3 cup dry ingredients with 1/3 cup water. Cook on medium-high in non-stick/cast iron skillet. After pouring batter onto skillet, quickly add sautéed mushroom slices and kale to top of omelette. Flip once bubbles form. Cook until underside is golden brown. Flip again.
